Everyone enjoys a little something sweet, so I'm going to share a great recipe for this time of year.
8 quarts popped corn, plain or slightly salted (about 4 bags of of microwavable popped corn) and place in a large roasting pan.
2 sticks butter
2 cups brown sugar, firmly packed
1/2 cup Karo syrup, clear
1 tsp. salt
1/2 tsp. baking soda
1/2 tsp. vanilla
Combine and boil butter, brown sugar, Karo syrup and sugar for 5 minutes. Take off stove and add the baking soda and vanilla, then stir to combine.
Pour the the hot mixture over the popped corn in the roasting pan and stir to thoroughly combine and bake for one hour at 250 degrees, stirring every 15 minutes. Cool and place in covered containers or cellophane bags and tie with ribbons to give as gifts.
Yum!
ReplyDeleteI can't wait to make this when it gets cooler outside. Maybe I'll use this as part of my holiday gift to my roomies and friends :)
